This ain’t your momma’s Mexican bowl! Does your mom even make a Mexican bowl? However, it IS my Montana sister’s Mexican bowl! I have to give her all the credit.
OK, I may have exaggerated when I made up the title of this recipe. I should have called it “My World’s Best Mexican Bowl” but once you try it, you may think that the original title is justified.
How to Make Everyone at Your Dinner Table Happy
So there are some variations that you can make. This recipe can be vegan, vegetarian, or you could always throw some grilled chicken, beef or shrimp on top and make everyone happy.
It could be served with all the ingredients separated and then each bowl can be put together by individual preferences.
Go ahead. Bring world peace to your dinner table. 🙂
And So it Begins…
with rice. I have a rice cooker and I honestly don’t know how people that like rice survive without one.
You can get started with a little one like I have (like this Black & Decker RC3406 6-Cup Rice Cooker, White) or a giant one like this:
but please do yourself a favor and get one asap! You will thank me later.
Cooking the Rice
Enough with the commercial but honestly, I don’t know how to cook rice without a rice cooker and I don’t even want to know. Trot on down to WalMart or Target and get one already!
We are starting with the rice because it is the thing that takes the longest. Once you cook up a batch, you could have a very quick lunch or dinner just by putting the ingredients together.
Cooking rice is easy if you know the formula. Use twice as much water as rice. So if you want to cook 1 cup of rice, add 2 cups of water. For, 2 cups of rice, use 4 cups of water. And so on and so on.
Rice is done! Now we are ready.
It is All About That Base!
The bottom layer of this Mexican Bowl is the most important thing about it. So let’s put it together.
You will need:
Add equal parts together of rice, black beans and corn:
Next add onion powder, garlic powder, and cumin. Lots and lots of cumin.
After mixing, you will see a beautiful base that looks like this:
So let’s put down the first layer in your favorite bowl.
Next, get ready for some color! Cut up some romaine lettuce in very small bites.
Add some tomatoes, if you like them.
I chopped the tomatoes up in my Vidalia Chop Wizard. Another product that I cannot live without!
Now we are ready to add the lettuce, tomatoes and I also threw in a bit of onion on top. Red onion is better for this but you gotta work with what you got!
Isn’t that lovely? But wait there’s more! Much, much more.
Now for the dressing aka salsa.
It doesn’t have to be this kind. Choose your favorite. Add to the top of the bowl.
Try to pretend that this picture isn’t blurry. Trust me, if this bowl was still in my kitchen looking like this, I would reshoot!
As an embarrassing consequence, the tomatoes are blending with the salsa in this picture. Just know that there isn’t quite as much salsa as it looks.
Now if you want to keep this bowl vegan, SKIP THIS NEXT STEP!!!
Add Ranch Dressing.
I NEVER knew that Ranch dressing had eggs and buttermilk until Venessa schooled me on this but sure enough after reading the ingredients for myself, it’s true!
So vegans beware, vegetarians or carnivores drizzle away!
It’s time to mix all this deliciousness together! Go.
Now for the last step. Add avocado.
A few chunks on top should do it.
That’s it! Try this Mexican Bowl and you are sure to agree that it is the World’s Best!
- Cooked rice
- Black Beans
- Onion Powder
- Garlic Powder
- Romaine Lettuce
- Tomatoes (optional)
- Red Onion (optional)
- Ranch Dressing (NOT VEGAN FRIENDLY)
- Add equal parts of cooked rice, black beans and corn.
- Add onion powder, garlic powder, and cumin to taste.
- Mix thoroughly.
- Layer mixture in a bowl.
- Add a layer of romaine lettuce cut into small bite-sized pieces.
- Add tomatoes and onion (optional)
- Spoon desired amount of salsa as dressing.
- Add Ranch Dressing (optional)
- Mix well to coat with dressing.
- Add chunks of avocado to top.
- Serve with a smile!
